Here is how you make South Beach Mix It Up Casserole:

Preheat oven to 350. Brown meat and drain. Add onion bits, garlic powder, 1 can rotel (make sure to drain it or it will make this soupy) and tomato paste with some salt and pepper to taste. Cook over low heat for about 10 minutes. In another bowl, mix sour cream, cottage cheese and other can of rotel (drained). In a larger bowl, combine meat with sour cream mixture. Add ½ the cheese and mix lightly. Pour mixture into greased casserole dish and cover with remaining cheese. Bake for about 15-20 minutes.
