3 Flour Tortillas
1 16 oz can of Fat Free Refried Beans
1 Can Diced Tomatoes with Onion and Bell Peppers (Drained)
1 Can mild RoTel (Drained)
12 oz Shredded Medium Cheddar Chesse
1 Bunch Green onions sliced
Non Stick Cooking spray I use the Olive oil type


How Do I Make Mexican Casserole (Pie)?

Here is how you make Mexican Casserole (Pie):

Brown and drain ground beef or turkey with white onion in a skillet. Seasoned to taste.In a sauce pan combine refried beans, mild Rotel (drained) and canned diced tomatoes with onions and green bell peppers (Drained) If Rotel and Tomatoes are not drained it makes the whole dish too wet.In a deep round baking dish with a lid first spray the dish with Non-Stick cooking spray then Place 1 tortilla on the bottom of the dish then layer first:Refried bean mix Ground burger or other meatShredded cheese green onionsBlack Olives (Optional)Repeat for a total of three totilla'sCover with lid and bake for 20 to 25 min on 350 dgrees until cheese is melted and dish is heated through. VERY IMPORTANT:Let dish stand and cool for 10 minutes before cutting and serving or it will just be too soft and come out a mess. If allowed to cool you can see all the layers like in a pie.
