The ingredients for Black Bean and Cheese Enchilda are:

Sauce:

1.5 cups water
1.5 tbsp Chilli powder
1 tbsp flour
dash of salt
Heat to a boil. This is your enchilda sauce (you can substitute old elpaso sauce for this if you choose).

Add 1/2 cup of enchilda sauce to the bottom of a 12x8 " casserole dish. Mash 2 cups black beans with a spoon add 1 tsp garlic powder, 2 tsp chilli powder and a little salt to the beans.

Assemble:
8 6inch corn tortilla (heat in microwave if neccessary)
1-2 tbsp black beans
1-2 tbsp colby cheese (2 cups total)

Spread beans onto tortilla, add cheese, wrap and place into sauce in dish seam side down. Repeat with each toritlla shell. Add remaining enchilda sauce onto the enchildas, sprinkle with remaining cheese onto enchildas. Bake at 350 degrees for 20-25 minutes until cheese is melted.
