-brown extra lean ground beef-mix browned ground beef, chopped onions, chopped green chili peppers, approx. 1 tbsp of red enchilada sauce and .5 oz grated cheese together in a small bowl. Season as desired.-roll the mixture of beef, onions, pepper, enchilada sauce and cheese in the corn tortilla-place the corn tortilla in a narrow baking dish.-cover the filled tortilla with the remainder of the red enchilada sauce-sprinkle the remainder of the cheese on top of the filled tortilla-bake at 350 degrees until the cheese is melted and browned. *Serve hot with lettuce, rice and refried beans.This works great for a quick dinner meal for one person.
