You will need an 8 quart crock pot.Grate the block of cheese.Pour gallon of milk into the removable portion of the crock pot and warm in the microwave. When the milk is warm (not boiling), begin adding scoops of the grated cheese one by one, heating in between scoops.This process will be long and take many episodes of scooping and heating. But if you try to do it all at once it will clump.Once the cheese is melted into the milk, add seasonings, chopped Jalape?o including liquid(I usually throw into a blender and crush further), and cream cheese (I usually use a jalape?o cream cheese).Place in crock pot on the lowest setting (usually "warm" setting on most models) with lid off for about an hour to simmer and allow the flavors to spread and integrate thoroughly.It will seem thin at first. Once poured into a bowl or dish, it will cool a bit and begin to thicken.You can thicken in the crockpot by leaving it on with the lid off to allow the water to evaporate. If you are in a rush you can put it on high to speed the process, but I advise that you can cause the dip to turn an orange tint if left too hot for too long.You can spice to taste. I usually like a little more salt/seasoning than the recipe calls for. My mother on the other hand likes a little less.You may mess this up the first time you try it.
