I received my Lap-band on 5/19/2008. I created this recipe especialy for people who have had bariatric surgery, particularly Lap-band, but it is healthy for anyone to eat. This is very quick-to-fix. It makes a large and very filling entrée for lunch or supper. If you have had bariatric surgery, cut it in half and save the other half for the next day or a snack later the same day (if your family doesn't gobble it up first)!Remember to take small bites and chew each bite at least 25 times before swallowing!

1/4 oz green onion bulbs & a little of the green tops, fresh, cleaned and chopped
1 large egg
1 Tablespoon DAISY® Lite sour cream (or comparable reduced fat product)
Salt & pepper to taste (optional & not included in nutrition totals)

Bariatric Lap-band Surgery? Makes 2 servingsOthers: Makes 1 serving.1. Put tortilla flat on a 9 or 10 inch plate or other microwavable flat dish. 2. Sprinkle fat-free Cheddar cheese evenly on top. 3. Microwave for 30 seconds on high or until cheese just starts to melt. Set aside.4. Spray 8-inch non-stick skillet with cooking spray and bring to a medium-high heat. 5. Add onions and sauté until lightly carmelized, about 1 minute. 6. Turn heat down to medium and add egg. Scrambled along with onion until just set. Do not overcook or egg will get tough.7. For quesadilla, spread egg & onion mixture on one half of the tortilla and fold other half over the top, pressing down lightly. For burrito, put egg & onion mixture along the middle of the tortilla, fold up one end and roll up burrito-style.8. Microwave 30 seconds.9.
