This is my mom's enchiladas remade healthier. The oringinal recipe came from a Latin American co-worker and is the best I have had. You can easily add additional spices and ingredients to suit your pallet, such as, olives, green chilis, onions, beans, etc.Serve with refried beans and Spanish rice!

1 1/4 Cup Cheddar cheese

1 Cup Water
2 Tbsp. Olive oil
1 tsp. Salt
2-3 tsp. Chili powder
1 tsp. Garlic powder
1 tsp. Onion powder

1/2 Cup Water
3 Tbsp. flour

Here is how you make Mom's Cheese Enchiladas - Remade (by STRENEE):

1. Add water, olive oil, salt, chili powder, garlic powder, onion powder in a sauce pan; mix well. In a small cup or bowl, mix 1/2 cup water & 3 Tbsp. flour until smooth. Heat sauce pan over medium-high heat. When mixture starts to bubble quickly, add flour-water mixture, stirring constantly with a whisk. Quickly remove from heat when thickened.2. Heat tortillas in the microwave. Spread tortillas around to allow each tortilla to warm. Leave tortillas in the microwave while mixing ricotta, cottage cheese, 1/2 cup sauce and 3/4 cup cheddar cheese. I use a hand mixer to do this.3. Spray 13x9 dish with non-stick spray. MESSY VERSION (Preferred): Dip each tortilla into the sauce. Place the cheese mixture (about 1/3 cup) on a tortilla and roll/fold - do not worry if it tears (your belly won't care).
