Here is how you make Poblanos stuffed with shrimp and goat cheese:

Preheat oven to 350. Mix together the goat cheese, onion, bell pepper, garlic, shrimp and cilantro. Season to taste with salt & pepper. Stuff half of the cheese mixture in each poblano chile. Pour half of the enchilada sauce in the bottom of a glass dish (large enough to hold both stuffed chiles) and then put the stuffed chiles in the dish. Top each chile with half of the shredded jack cheese and then drizzle with the remainder of the enchilada sauce. Bake until hot and bubbly, about half an hour.
