5 cups cheddar cheese, 2% milk (or reduced fat)

Preheat oven to 350 degrees and spray a 13" x 9" pan with cooking spray.Spread a thin layer of enchilada sauce on the bottom of the pan. Cut 6 tortillas in half and lay them in the pan; spread a thin layer of enchilada sauce over the top of the tortillas. Add 1/2 of the chicken and 1/3 of the cheese. Add another layer of the sauce, another 6 tortillas, another layer of sauce, the remaining chicken and another 1/3 of the cheese.
