8 oz orange juice (peach or mango will work as well)
2 tbs ground cumin
1 tbs chipotle chili powder
1 tbs paprika
1 tbs garlic powder


8 chicken thighs, skin, bones and fat removed
1 large onion, sliced
1 yellow bell pepper, sliced
1 tbs ground cumin
2 tbs olive oil

20 tortillas, soft corn
3 avacados, sliced and squired with lime juice.

Here is how you make Grilled Chicken Tacos (or Fajitas) with Avocado:

Mix the first 8 ingredients in a medium mixing bowl and stir well until all spices are mixed together. Rinse the chicken and pat dry. Place the chicken in a large zipped bag and pour the marinade into the bag. Seal and mix well. Place on a plate in the refrigerator for at least 1 hour.Mix the remaining tbs ground cumin and 2 tbs olive oil with the sliced onion and bell pepper in a zip lock bag.Grill the chicken over medium heat until done. When the chicken is half done, put the onions and peppers on the grill or in a skillet over medium heat. Cook until the onions are opaque. Remove from heat when done and let the chicken set for 5-10 minutes. Slice the chicken and serve on warm corn tortillas with sliced avocado and grilled onions and peppers.
