3 Chicken Breast, boneless, skinless, raw (about 8 oz each)
2 cups Low Sodium Chicken Broth
1 cup water

1 pkg of taco seasoning** or:
**1 Tbsp Chili powder
**2 tsp Onion powder
**1 tsp Cumin - ground
**2 tsp Garlic powder
**1 tsp Paprika
**1 tsp Oregano, ground

1/2 medium onion, chopped
3 Tbsp white flour (I use Wondra flour)
1/4 cup cold water
1 can low sodium black beans, rinsed & drained
1 1/4 cup frozen corn, thawed
1 can Rotel Diced Tomatoes & Green Chiles
1/2 cup low fat cream cheese, room temperature
3/4 cup low fat shredded Cheddar Cheese
4 6" corn tortillas
3-4 sprays of Pam Olive Oil Spray 4 second spray


How Do I Make Chicken Mex Lasagna?

Here is how you make Chicken Mex Lasagna:

Preheat oven to 400 degrees. Prepare casserole or lasagna pan using Pam spray. Set aside.In saucepan, mix broth & taco seasoning, add chicken & onion. Bring liquid to a boil & cover, reduce to a simmer, cook for 10 minutes & remove from heat. Allow to sit for 15-20 minutes. Remove chicken, reserving 2 cups of the liquid, & allow chicken to cool slightly for shredding. Shred chicken & set aside.Mix flour with cold water. Pour into reserved liquid stirring often over medium heat until thickened. Remove from heat & add cream cheese, Rotel, beans, corn, & shredded chicken to liquid.Spread one third of chicken mixture in bottom of casserole dish or lasagna pan, top with two tortillas. Repeat with remaining ingredients & ending with chicken mixture.Bake for 25-35 minutes until hot & bubbly. Spread cheese over the top & return to oven until all the cheese has melted, about 10 minutes. Allow to set for 10 minutes.Serve with lettuce & tomatoes & low fat sour cream (not included in calorie count).Serving Size:?8
