Heat olive oil over medium-high heat in a large skillet; add chicken and Simply Southwest Seasoning & Rub. Saut? until chicken is cooked through; set aside. Combine canned tomatoes and Ol? Ol? Fiesta Sauce; set aside. Place 1 tortilla and 1/2 cup of tomato mixture in the bottom of a greased deep-dish 9-inch pie plate. Top with half of chicken, 1/2 cup tomato mixture and 1/2 cup cheese; repeat layers. Top with remaining tortilla, tomato mixture and cheese. Bake at 350? for 25-30 minutes or until heated through and bubbly. Let stand 5-10 minutes. Cut into wedges. Serve garnished with sour cream and cilantro.
