Here is how you make Chicken Fajita Salad with Guacamole:

To make the guacamole: Remove the pit and peel the two large avocados and place in a bowl. Chop the garlic and onion and slice the tomato and add to the bowl. Add an appropriate amount of lime juice and pepper. Mash and stir until the texture is smooth. Taste and add whatever ingredient is necessary. Place the bowl in the frige for the rest of the cooking.Put the El Rio All Natural Spanish Rice in a pot with about a cup of water on medium to medium-low heat.Put a tablespoon of vegetable or canola oil in a large pan and add the raw chicken on medium-high heat. Partially cook the chicken. Take the chicken out of the pan and cut into medium sized chunks. Add another tablespoon of oil if necessary, and put the can of Allens Tomatoes, Okra, and Corn in the pan. After a couple of minutes, add back the chicken and mix in the McCormick Fajita Seasoning Mix.
