1 tsp. salt
1/2 tsp. black pepper
water
1 small can tomato paste
1/2 cup flour
1 medium onion, diced
1 carrot, diced
1 stalk of celery, diced
4 tbsp's chili powder
1 tsp. garlic powder
1/4 tsp. cayenne
salt and pepper
1/4 cup pickled jalapeno chopped, plus 1 tbsp. of the juice
4 cups prepared brown rice

Here is how you make Chicken Enchilada Soup (dairy-free):

Rinse chicken and dry with paper towels. Heat a dutch oven over medium high heat. Add about half the chicken to the pot at a time. Brown on all sides, working in batches. Place all chicken in the pot in as even layers as possible. Salt and pepper well. Add hot water until barely covered. Bring to a boil. Reduce heat to low and cover. Simmer about 45 minutes. Remove chicken, allow to cool and strain the broth into a large container. Add the onion, celery and carrot to the same pot and slowly add some of the broth, or water to prevent burning. Puree vegetables in a blender if desired. Add tomato paste, chili powder, garlic, and cayenne. Stir in the vegetable puree. Pick through the chicken, removing all of the bones, fat, etc. Add to the pot along with the broth. Simmer twenty minutes. Serve over hot brown rice.
