1 quart (32 oz) chicken broth, 99% fat free
1 14.5 oz. can pinto beans, drained
1 14.5 oz. can petite diced tomatoes
4 c. fresh spinach, chopped
2 avocados, chopped
1/4 c. cilantro, chopped
2 limes, juiced
2 c. cooked white rice

Here is how you make HealthierLynn's Southwestern Chicken Soup:

Cook the rice according to directions.While the rice is cooking, heat olive oil in a soup pan over a medium flame. Add garlic, onion, bell pepper and jalapenos and cook for 5 minutes, or until the veggies are soft.Add chicken and cumin and cook another 5 minutes.Add chicken broth, pinto beans, spinach and tomatoes. Increase heat to medium-high, cover and simmer for 10 minutes.
