Cut the chicken tenderloins into bite-size pieces and add to the warm oil and stir browning. Add into the skillet the can of tomatoes with jalapenos and the frozen vegetables, the taco seasoning and stir. Cover and heat on medium heat for approximately 10-15 minutes, stirring occassionally. Uncover and simmer for approximately 15 more minutes allowing part of the excess liquids to cook off. Divide into four (4) dishes of approximately 1 1/4 cups and serve with a whole wheat or fat free tortilla.
