1 can black beans, rinsed & drained

2 chicken breasts, cooked, skin & bones removed & meat shredded
2 cups of corn (from 2 fresh ears)
1/3 c chopped fresh cilantro
1 Tbsp ground cumin
1 tsp ground coriander
16 6-inch corn tortillas
3 7-oz cans of salsa verde
4 oz shredded Monterey Jack cheese (about 1/4 pound)
salt & pepper

Here is how you make Chicken and Veggie Enchiladas Verde:

Preheat oven to 350.In a large bowl, combine the bell pepper, jalepeno, black beans, lime juice, shredded chicken, corn, 1/4 cup of the cilantro, cumin and coriander. Season well with salt & pepper. Add a little bit of one can of salsa to moisten the filling.Spray two large baking dishes with nonstick cooking spray. Pour one can of salsa in the bottom of the dishes. Take one tortilla, put about 1/4 - 1/2 cup of filling in the center, roll it up, and place it seam-side down in the baking dish. Continue filling & rolling the tortillas until you've used up all the filling & tortillas. Top the enchiladas with the rest of the salsa verde, then sprinkle with the shredded jack cheese. Bake for 30-40 minutes, until the filling is hot and the cheese is melted, and the edges are golden brown.Top with the remaining cilantro.
