1 medium red onion, chopped
1 large tomato, chopped
1/2 cup low fat shredded cheddar
1 tsp cumin powder
Salt and Pepper to taste
1 lime


How Do I Make Veggie Stuffed Mexican Chicken?

Here is how you make Veggie Stuffed Mexican Chicken:

chop red onion, put into pan with whole can of corn. (I use some of the liquid in the can of corn to keep the food from sticking to the pan). Cook on medium heat about 5 minutes. Just enough for the onion to start to look translucent. Add chopped tomato, cumin, salt and pepper. Cook for another 5 minutes.In a medium size pan, spray with cooking spray and heat to medium heat. Put a scoop of the corn/onion mix in the center of each chicken breast, folds the ends of the breast to the middle and then secure with a toothpick. Place chicken in sauce pan, squeeze lime juice over chicken while in the pan, then slice up the juiced lime and add to the pan as well. Let chicken cook for about 5 minutes on each side, this can vary depending on the thickness of the chicken breast. At the end sprinkle the cheese evenly over chicken and let melt.(The corn/onion mixture is too much to use it all in the chicken breast.
