Cook the rice according to directions on the package and feel free to add dried herbs and spices to the water with the rice (whole cumin seeds are really nice). Saute onions, garlic, and mushrooms together, as the juice from the mushrooms allows you to avoid using oil.Once the chicken, rice, and veggies are cooked start the assembly line. In a line down the center of each tortilla put about 1.5 oz of chicken, 1/4 c of rice and about 1/6 of the veggies. Fold over each side of the tortilla and place in a non stick cassarole dish coated with fat free cooking spray. You should be able to fit 6 wraps side by side in the cassarole dish with the folded side down. Pour the salsa over the enchiladas to make an even coating. If you must add cheese, you can sprinkle a bit over the top sparingly.Place in the oven for 10-15 minutes so it is heated through and the flavors have a chance to blend.
