What Are The Ingredients For Kate's Enchiladas Recipe?The ingredients for Kate's Enchiladas are: 7 medium Tortillas1 lb (16 oz) Precooked Chicken Breast (boneless/skinless) 1/4 cup Half & Half 2 cups Canned Enchilada Sauce (your choice, I use Carlita's) 2 cups Shredded Taco Cheese How Do I Make Kate's Enchiladas?Here is how you make Kate's Enchiladas: Preheat oven to 375.PRECOOKED CHICKEN: dice or shred until easily separated/bite size. If using rotisserie style chicken, render meat and separate from skin and bones. Discard carcass.Uncooked chicken: Cook chicken breasts in a pan - use a little Pam or olive oil until just done. Season as you please to taste. Combine chicken and onion in saute pan until warmed through and onions are nearly clear. Add 1 cup enchilada sauce and half and half, combine well until sauce starts to bubble.Grease 9x13 Pyrex dish or casserole. Use 1/2 cup reserved sauce to cover the bottom of the dish.Fill tortillas with 1/7 of the chicken mixture, roll, and set in pan. Repeat for each. Rolls should touch each other in the pan. Spread last 1/2 cup of enchilada sauce over the top of the rolls. Sprinkle liberally with taco cheese on top.Bake at 375 until cheese is melted thoroughly.
