I saw this once on a cooking show & made my own changes because I like hearty salsa instead of runny enchilada sauce. This one turns out a little different every time - but it's always a hit at our house. I like to serve it with a couple slices of pineapple on the top.

-1 whole roasted chicken - fresh
-6-8 whole wheat tortillas - fajita size
-part-skim, low fat shredded mozzarella cheese
-1 tbsp oil
-1 large onion - chopped
-2-3 jalapenos - chopped, seeded
-1 can, diced tomatoes
-chili power - 1 tsp
-cumin - 1 tsp
-cilantro - 1 tsp
-salt & pepper to taste
- sour cream (if desired)


How Do I Make Mama's Enchiladas?

Here is how you make Mama's Enchiladas:

Pre-heat oven to 350'FSalsa - (for an even quicker recipe, use a store bought salsa). In a large pan, add 1 chopped onion to tsp cooking oil. Add chopped, seeded jalapenos. Cook until tender. Add can of diced tomatoes, with liquid. Bring to simmer. Add chili powder, cumin, cilantro, salt & pepper to taste. Set to simmer on low.Take whole roasted chicken & pull apart. In a large casserole dish, line bottom of dish with some salsa to prevent sticking. Roll 1/8 pulled chicken & shredded cheese in warm tortilla (fajita size) & place in casserole dish. Repeat until all tortillas are used. Sprinkle any left over pulled chicken over tortillas. Pour hot salsa over enchiladas. Place in oven & bake for 15-20 minutes until dish is warmed through & cheese is melted. Sprinkle any remaining shredded cheese on top during last 5 minutes of cooking.Serve with sour cream & enjoy!!Makes 6-8 enchiladas.Number of Servings: 8Recipe submitted by SparkPeople user APESFORDANA.
