Brown turkey meat. Add can of diced tomatoes. Let simmer for 5 minutes. In a bowl mix cottage cheese, cheddar (1/4 cup) , and egg beaters together. In a separate pan place one toritilla on the bottom of the pan. Then pour the meat mixture over. Top with another totilla and then pour the cheese mixture over. Top with the remaining cheese.
