What Are The Ingredients For Mexi Meatballs Recipe?The ingredients for Mexi Meatballs are: 2 beaten eggs (I use Better 'n' Eggs egg substitute, 0.5 cup)White Bread, 1.5 cup, crumbs Milk, 2%, .25 cup Onion Salt, 1.5 tsp (I used onion powder, 1 tsp; and salt, 1 tsp) 1 tsp of basil, thyme, or marjoram (I used Basil, .25 tbsp) Pepper, black, .25 tsp Ground beef, lean, 24 oz Cheddar Cheese, 3 oz - cut into 12 (1/2 in) cubes - (I've also used an equivalent amount of shredded cheddar) Taco Sauce, about 1/3 bottle How Do I Make Mexi Meatballs?Here is how you make Mexi Meatballs: 1. In a large bowl combine the beaten eggs, soft bread crumbs, milk, onion salt, choice of spice, and pepper.2. Add ground beef; mix thoroughly (At this point, this is a very basic meat loaf mix)3. Divide mix into 12 portions4. Wrap one portion of meat around each cheese cube, making a ball. Place one meatball in each of twelve 2.5 inch muffin cups. Bake in a 350 oven for 20 minutes. Spoon off fat.(I used an Alton Brown trick - I prepare the meatballs in a muffin tin, but turn them out onto a sheet pan before baking - that way the excess fat runs off instead of trying to spoon it off)5. Spoon taco sauce over each meatball. Bake 5 minutes more.
