1 Yellow Onion, chopped
1 Green Pepper, chopped
2 Jalapeno Peppers, finely diced
3 cloves garlic, minced
1 large stalk Celery, chopped
1 large Carrot, chopped
3 Roma Tomatoes, chopped
1 Russet Potato, cubed
1 can Ro-Tel No Salt Added Diced Tomatoes & Green Chilies -10 oz, undrained
1 can Del Monte No Salt Added Whole Kernel Corn-15.25 oz, undrained
1 Tbsp Garlic powder
2 tsp Onion powder
2 tsp Chili powder
2 tsp Ground Cumin
0.5 tsp Cayenne Pepper (Ground)

Here is how you make Abuela's Picadillo con Papas:

Prepare all vegetables except tomatoes, potatoes, and garlic. Store in an airtight container in fridge.Prepare tomatoes and store in separate container.Cube potato and store in container, covered by cold water to prevent discoloration.In a dutch oven or deep skillet, begin to brown meat.After 5-7 minutes, make space in middle of pan and add vegetable mixture. Stir and begin to soften for 5 minutes.Mince garlic and add to vegetable mixture and stir. Cook for 1-2 minutes, or until garlic becomes fragrant.Add tomatoes and stir.Cook mixture for an additional 5 minutes.Rinse and drain potatoes well and add to pan.Add all spices.Stir and cook on med-low for 5 minutes, stirring occasionaly.Add diced tomatoes and green chiles.Add 1-2 cups liquid. I use 2 cups water, but stock or stock and wine can be used, depending on your tastes.Bring to a boil, then reduce heat to med-low. Taste for spices. Add as necessary.Cover and simmer for 20-25 minutes.Using a fork, test potatoes for doneness. They should be a little soft, but not mushy.When potatoes are to your liking, stir in corn.Cover and simmer for an additional 5minutes.Turn off heat and leave mixture covered for at least 5 more minutes.Enjoy.Serving Size:?Serves 6-8
