How Do I Make Original Pollo Loco?

Here is how you make Original Pollo Loco:

*Preheat the oven to 350 degrees Fahrenheit *First, we will prepare the vegetables that we will use throughout the dish.*Dice zucchini, yellow squash, and carrots*Cut green beans *Finely dice onion *Slice mushrooms*Set all vegetables to the side until needed*To prepare the chicken, grab 1 whole chicken breast*Slice the chicken breast in half. Then slice each half longways. *Tenderize each slice*Repeat for each chicken slice.*Now, we will get the breading for the chicken.*In a separate flat plate add 2 cups of flour and 2tps of Lawrys Seasoned Salts and 1 tbs of black pepper*Mix the dry ingredients together*Place aside for now.*In a non-stick skillet 4 tsp of canola oil, in medium heat.*While the oil is heating up, we will bread the chicken.*In another bowl add 1 cup of whole milk*Dip each chicken breast slice into the bowl of milk then dip it into the bowl of dry ingredients (Flour, seasoned salts and black pepper) *Place 1 chicken slice into the skillet, after 2 minutes, flip the chicken. Flip after 2 minutes. Keep cooking until the chicken is lightly golden brown. Do the same to the other 3 pieces. *Place the chicken aside. For the vegetables *In a new skillet, place 2 tsp of canola oil, and place it in medium high heat. First cook the carrots for about 2 minutes. Then add the zucchini and yellow squash. After 1 minute, add the green beans. Keep cooking until the carrots are tender. Once they are a bit tender, add the spinach. Keep cooking the vegetables until the spinach is fully cooked. Place aside. *Now, to start on the sauce, get a saucepan and place it on medium-high heat. *Inside the saucepan, pour in 1 tsp of canola oil. Once the oil is heated, place the onion and cook until they are starting to get a golden brown color. Next, add the sliced mushrooms. Cook for about 2 minutes. *Now pour in the heavy whipping cream. With a whisk, stir occasionally. *Get a bowl, and pour in the rest of the flour and butter in the bowl. Microwave for about 30 seconds, or until the butter is melted. *If the mixture in the saucepan begins to bubble or overflow, remove from heat and lower the heat. Keep stirring until it lowers.*Once the mixture in the saucepan starts to boil, pour in the butter and flour mixture. Stir until the sauce starts to thicken. If it is too thick, add about 1 tsp of milk to help make it less thick. Once it is bubbling, then the sauce is ready. Place on the side. On a baking sheet place the chicken first. Then add the cooked vegetables on the top. Sprinkle about 50 grams of Monterrey Jack cheese on top. *Now place inside the oven.
