Sear the pork on all sides. Transfer the pork to a platter and set aside.Pour off the oil in the pan and saute the onion, jalapeno and garlic and just until they begin to soften, 1 to 2 minutes. Add the beer and deglaze the pan.Transfer the pork in a Dutch oven and pour in the beer mixture. Add the lime juice and oregano. Cover and cook until the pork is very tender, about 2 1/2 hours.Remove the pork from the Dutch oven and cover loosely with aluminum foil.
