2 Flour Tortillas
3 Chicken tenders, skinless, sauteed
Bell Peppers, sliced/chopped
1 Can (12 oz.) Yellow Sweet Corn
1 Medium Tomato, sliced
1/2 c. Salsa (any kind you want)
1/2 c. Shredded cheeses (any kind you want)
A squeeze of lime juice, just to taste

Here is how you make Pollo Mexicano Quesadillas:

*Don't let the nutrition facts scare you. The sodium won't be that high. 1. Begin sauteeing the chicken in a skillet on medium. If necessary, you can use Extra Virgin Olive Oil to help with cooking it. 2. While the chicken is thawing and cooking (I used frozen skinless chicken tenders), do all the veggie chopping and slicing with the tomatoes & peppers. Intermittently continue checking on the chicken making sure it's sauteeing evenly. 3. Continue checking on chicken. After tomato is sliced and peppers are chopped, open the can of corn and pour into a colander. Then, run it under the faucet (or if you have a brita filter, pour the brita water into the colander) of cold water. This will lower the sodium content quite a bit from what you see in the nutrition facts.4. Chicken should be almost ready to chop. If ready, just use the hard spatula to chop it into smaller pieces. 5. After chicken is chopped, feel free to add lime juice for taste. 6. Take the sliced tomatoes, sliced bell peppers, and corn and put them together in a bowl. Add salsa and shredded cheese(s). Mix well.7. Use a griddle (have on 300 degrees F), or a large skillet (have on Low on the stove), and place the first tortilla on/in it. Now pour all ingredients, in/on it, while it cooks, and cover the top of the ingredients with the second tortilla. 8. After a few minutes (2-3), CAREFULLY flip the entire quesadilla over so that the top part is on the heated side and will be able to cook; along with the internal ingredients.9. After a few more minutes (2-3), you should have your quesadilla.
