2 cups white rice, long grained
1/2 med. onion, chopped
1/4 C. green pepper, chopped
2 cloves garlic, minced
1 tsp. cumin, ground
Black pepper to taste
1 Tbsp. Knorr Chicken bouillon powder OR 2 Knorr Chicken bouillon cubes
1/2 C (or 1/2 8 oz. can) tomato sauce
4 C water, not cold - hot or room temperature


How Do I Make Sopa - Mexican rice?

Here is how you make Sopa - Mexican rice:

Have everything measured ahead of time. Can combine tomato sauce bouillon and seasonings in one bowl. Need to make in a pan that has a tightly fitting lid.1) Heat pan over med-high heat. Pour in 1 T of oil or enough to thinly coat the bottom of the pan. 2) Add onion and green pepper. Saute 1-2 minutes. Add raw rice. Stir. Cook rice until golden and smells nutty. Stir frequently to prevent scorching.3) Add garlic. Saute 1-2 minutes, constantly stirring. Add cumin, black pepper, bouillon powder and tomato sauce. Cook 2 minutes. Keep stirring.4) Add water carefully, will steam up. Stir to loosen bottom. Bring to a boil. Cook 20 minutes or until most of the water gone. Rice should look dry on top and cratered. Do not stir during this time, it will make sticky rice if you do. 5) Place lid on turn heat to lowest setting or remove from heat all together. Let sit at least 5 minutes. 6) Test rice.
