1 can of diced tomatoes with chilies
1 can of black beans
1 can of corn
1 small onion, diced
1-2 fresh avacado, diced
2 hearts of romaine, diced or a bag of romaine salad works fine too
1 cup of salsa
1 lb of 93% lean ground beef
about 20 dorito chips- any flavor ( I used the jalepeno flavor)
1 packet of taco seasoning
1 tablespoon of minced garlic
1 tablespoon of cummin
1 cup of shredded mexican style cheese (to save on calories- use as a garnish & use the low fat if you can find it)
1 tablespoon of fat free sourcream used as a garnish
1 small wheat tortia used for taco shell

Here is how you make Yummy but good for you taco salad:

Turn oven on 400 degrees. Crumple up mediumn size balls of alumin foil and place on a cookie sheet a few inches apart from each other. Spray the tortillas with cooking spray & if you like sprinkle with a chili powder, garlic powder or oregeno or as I do, all of the above. Place a tortilla over a foil ball, creasing the edges to form an upside down shell. Place in oven for about 5 -7 mins or so depending on your desire of how crispy the shell. Fry ground beef with garlic. Add taco seasoning packet with the right amount of water according to package. In a large bowl combine the beef, tomatoes, beans, corn, onion, avacado, lettuce, salsa- mix together. Sprinkle some cummin, and add crushed cips on top. Sprinkle about a tablespoon or 2 of cheese on each serving if desired, with a tablespoon of fat free sour cream. Guacamole is good too as a topping. This recipe is very flexible, add or omit whatever type of ingredients you please- pinto beans, jalepenos, pientos, banna peppers, green, red, yello peppers would all be good with this... no matter what its a good variety of helathy food.
