Coarsely chop vegetables. Leaving skin on the zucchini for fiber and color. I use my food processor. Mix together in bowl. You can add jalapeno or other peppers to taste if you like it hotter. Add cilantro, salt, olive oil and lemon juice (lime juice is good too). Stir up and enjoy.
