1 pound Ground Turkey
1 t.Chipolte powder
1 T.Chile Powder
2 t. Cumin
1 can S&W diced tomatoes with no salt added
1 cup Organic Low Sodium Chicken Broth
1 cup Organic Vegetable Broth
4 Tomatillos,
4 cloves Garlic
1 Jalapeno pepper
Cilantro
Tortilla Chips, 1 oz
1 can Beans, black
1 Lime (zest and juice)


How Do I Make Mexican Turkey Tortilla Soup?

Here is how you make Mexican Turkey Tortilla Soup:

Clean and dry tomatillos. Place tomatillos, jalapeno and two garlic cloves on baking sheet. Place in a 450 degree oven for 15 minutes to roast skin. In a dutch oven or stock pot over medium high heat saute onions, carrots and remaining garlic cloves (peeled and chopped) in olive oil till soft. Add ground turkey and stir till cooked. Stir in chipolte powder, chile powder and cumin. Add tomatoes and their juice. Remove tomatillos, jalapeno and garlic from oven and let cool enough to handle. Remove seed from pepper and peel garlic. Place allo three ingredients in a food process along with lime zest, lime juice, cilantro and chips. Pulse until blended. Add to other ingredients cooking for a few minutes. Add broth and bring to boil and then lower to simmer for 15 minutes. Add beans and cook for another 15 minutes. Add salt and pepper to taste.
