What Are The Ingredients For Cheesy and Stuffed Fajitas Recipe?The ingredients for Cheesy and Stuffed Fajitas are: 1 cup of brown, long grain, rice1 8oz. can of refried beans 2 tbsp. extra light olive oil 1/2 cup of chopped sweat onion 1/2 cup of chopped green bell pepper 1/2 cup of sweat red pepper (red bell pepper) 1 chicken breast, boneless and skinless 6 whole wheat flour tortillas 8oz fat free sour cream 1 cup of shredded cheese How Do I Make Cheesy and Stuffed Fajitas?Here is how you make Cheesy and Stuffed Fajitas: Heat 1 tbsp. of olive oil in saucepan. Stir in rice, then add water and cook, covered, till tender. Remove lid and allow remaining water to evaporate. Fluff with fork. Set to the side.Heat one 8oz can of refried beans. Set to the side.Heat 1 tbsp. of olive oil in frying pan. Sauté onions, green peppers, and red peppers. Add one chicken breast, grilled and cut into bite size pieces. Season to taste. (I grill my chicken first to remove as much fat and grease as possible. Leave it a little moist, and finish cooking it in the frying pan. If your chicken and pepper is a little to dry to spread your seasoning around, add a little water. It won’t hurt and it's better than more oil or fat grease)Now you are ready to put it all together.Fill the tortillas with the refried beans, rice, peppers, and chicken. Fold the filled tortillas like you would a burrito, tucking in the ends. (It works best if you put the beans on first, like you are putting sauce on a pizza, then the rest of the ingredients down the center) Place the filled tortillas, fold down, in a casserole dish. "Ice" with 8oz of sour cream and top it all of with the shredded cheese of your choice. Place in the oven at 375 degrees until it starts to bubble. Remove from oven and enjoy.
