Set aside.Open each individual string cheese and set aside for later. You want to do this before you start handling the jalapenos.Get your box of toothpicks ready.Put on vinyl or latex gloves (you can get them at Walmart or Walgreens - they come in a box of 50) to be used when handling the jalapenos. This will protect you from later rubbing your eyes or face and feeling the effects of the jalapenos. Skip this step once and you will wish you hadn't!Take each fresh jalapeno and cut in half, use a knife to remove the seeds and membrane from each half. After all 12 are cleaned this way, put them in the boiling water and set timer for 5 minutes. This will par-boil them to soften them to make them easier to eat, but does not cook them to the point where they are mushy. You just want them slightly crunchy for best results. The par-boiling also takes some of the heat out of the peppers.After 5 minutes, drain and lay the halves out on a flat surface (I use a plastic cutting board for my assembly-line).Cut a piece of string cheese to fit into each half, then take the individual slice of ham (folded) and wrap it around each half and close with a toothpick.You can do either of the following, depending on preference:(1) Heat in microwave for 2 minutes before serving, or until the cheese begins to melt.(2) Heat in 400 degree oven for 10 minutes, or until the cheese begins to melt.
