I usually use the time waiting for the water to boil to prep the onions and peppers. Once the water boils place two bags of rice in for 10 minutes. Drain and set aside.Place ground turkey in a large frying pan or electric skillet and brown. Add diced onion and cook until onions start to soften. Next add 2 cans of tomato sauce, 1 can of Ro Tel diced tomatos and chiles and 2 TBSP of Louisiana hot sauce. Simmer and mix well. Add rice to mixture and again mix well. Reduce heat to low.Place bell peppers in a baking dish and with a spoon start 'stuffing' the peppers. Fill them to heaping as you should have plenty of 'stuffing'. Top peppers with shredded cheese and place in preheated oven at 350 degrees. Bake for 30 minutes.Note: The hot sauce is optional, I have made it without hot sauce and allow everyone to add it as they see fit to their plate. This will make 6 servings and each pepper is a meal in itself at just over 300 calories per serving.Number of Servings: 6Recipe submitted by SparkPeople user DOZER189.What's The Nutritional Info For Dozer's stuffed peppers? The nutritional information for Dozer's stuffed peppers is:
