What Are The Ingredients For Quinoa Stuffed Poblanos Recipe?The ingredients for Quinoa Stuffed Poblanos are: One 28-ounce can whole peeled tomatoes3 cloves garlic, peeled 6 chipotle peppers (packed in adobo sauce) 2 tablespoons olive oil 1/2 cup small red onion, diced 1/2 cup small red bell pepper, diced 1/2 cup frozen corn 1 cup cooked quinoa 1 teaspoon chili powder 2 large poblano peppers (4 if small) 1/2 cup grated reduced-fat pepper jack cheese How Do I Make Quinoa Stuffed Poblanos?Here is how you make Quinoa Stuffed Poblanos: Preheat the oven to 400 degrees F.Add the whole tomatoes, garlic and chipotle to a blender and puree until smooth. Add to a saucepan and simmer over medium heat until slightly thickened, about 15 minutes.Add 2 tbsp olive oil to saute pan and lightly saute peppers and onion while tossing with chili powder. Add corn once the vegetables become translucent or partially cooked, cook the corn with the other veggies and then turn off the heat and add the cooked quinoa, mixing everything together.Split poblanos in half lengthwise and remove the seeds. Gently stuff with the quinoa mixture. Ladle about half the tomato sauce mixture into a 9 x 13 casserole dish. Place the peppers on top and cover with remaining sauce and sprinkle with cheese.
