Place poblanos on cookie sheet under the broiler for about 10 minutes, turning a few times. Once peppers begin to blister and blacken, remove from oven and let cool. Turn oven to 350*.2. Coat large skillet with cooking spray and add onions, garlic and green peppers, cook until beginning to get soft. Add corn, cook for 2-3 minutes then add in the beans and rice. Add in seasonings to taste and continue cooking for about 5 minutes. Add in chopped tomato cook until well mixed and remove from heat.3. Carefully slit open one side of each poblano and remove the seeds from the inside. Lay each back on the cookie sheet and carefully stuff each poblano with equal parts of the filling. Top each with one ounce of shredded cheese.
