Here is how you make Colorful and Tangy Southwest Tacos:

Mix taco seasoning and a BBQ marinade (your choice!) in a gallon plastic bagCut the steak into strips and put into the bag. I like to marinade for a few hours but if you are short of time, just cook it up!Cook the meat on the stovetop or grillWhile meat is cooking, put the corn, lime juice, and chopped spinach in a separate pan. Roast/cook until corn is warm and spinach is cookedHeat the corn tortillasLoad up each tortillas with the meat along with the corn/spinach, salsa, and plain yogurt (substitute for sour cream). Eat up!Each serving is two tacos. Each taco has 2 oz steak, 1/4 cup of corn/spinach, 1/4 cup of salsa, 2 tablespoons of yogurtIt's a yummy and filling meal. Substitute chicken for a lighter meat or flour tortillas (they will be more calories!) for a variation.
