The ingredients for Super Tacos are:

Ingredients:

1 cup of black beans - either a low-sodium canned version or use the dried black beans (soak in cold water overnight - then drain and rinse the beans, cook as directed on the package)
1 lb of lean ground turkey
1 cup (100 gms) of crushed tomatoes
2 tsp chili powder (more if you like spicy)
1 to 2 tbsp of cumin powder
1 to 2 tsp salt
1 to 2 tsp pepper
1 clove of garlic - minced
Pico de Gallo (recipe below)

2 cups chopped tomatoes
5 tbsp finely diced shallots
2 tbsp dried cilantro
salt to taste
juice of 1 lime



How Do I Make Super Tacos?

Here is how you make Super Tacos:

For tacos:Scramble fry ground turkey in a non-stick skillet with no added fat under barely cooked. Add in garlic and spices and stir around for a minute or two. Stir in black beans (cooked or canned) and crushed tomatoes, heat until boiling, then reduce heat and simmer for about 15 minutes just to let the flavours blend. If there is still liquid left in the pan you can turn up the heat at this point and let it sort of boil off, otherwise you can drain the meat mixture before serving.For Pico de GalloSeed the tomatoes and dice them rather fine. Dice the shallot and the jalapeno (seeded and ribs removed - use a serrano if you want it spicier). Place all ingredients in a bowl and sprinkle with salt. Sprinkle in dried cilantro (I use dried in our house because hubby and I find that fresh cilantro tastes soapy - it's genetic I guess) and squeeze the lime overtop.
