1 Pckg. Whole Wheat Burrito Tortilla
1 Pckg. Shredded Taco Cheese
1 26oz. Chunky Salsa
1 16oz. Fat Free Refried Beans
1 Cup Boiled White Rice
1 Small Chopped Tomato
1 Small Chopped Onion (optional)

How Do I Make Turkey Enchildas?

Here is how you make Turkey Enchildas:

Preheat oven to 350. In large skillet, cook turkey until turns white. Meanwhile, in small pot, boil rice until tender. Mix approximately 1 cup salsa into turkey and bring to boil. Add beans, stirring constantly until hot. Add rice and mix well. Place about 1 cup of mix down center of each tortilla then roll. Place seam side down in greased 13x9" baking dish. Pour remaining salsa down center of enchiladas and sprinkle top with cheese. Bake for 23-25 minutes.
