Here is how you make Vegetable Breakfast Burritos:

Chop red peppers, remove stems from spinach and drain mushrooms, dice avocado; set aside. Beat eggs with seasonings of choice (I like cayenne, garlic and black pepper); set aside. Heat olive oil in non-stick skillet. Add spinach, peppers, avocado and mushrooms. Saute until spinach is wilted. Add eggs and scramble until just cooked. Split egg mixture between four tortillas.
