1 Small Onion, unpeeled
1Jalapeno pepper
6 Cloves Garlic, unpeeled
Juice of 1 Lime
1 tsp. Sea Salt or Regular Salt

12, flour tortillas, fajita size
1 tbsp canola oil
4 Bell Peppers, seeded, cored and cut into strips (Green, Red & Yellow)
1 Medium Red Onion, peeled, cut in half vertically and thickly sliced
1 tsp. salt
Ground Black Pepper, to taste
1 can (16 ounces) Refried Beans
Chopped fresh cilantro and sour cream (optional)

Here is how you make Vegetable Fajita w/ Spicy Salsa:

For Salsa: Preheat broiler. Line a baking sheet with parchment paper or foil. Place unpeeled tomatoes, onion, jalapeno and garlic on prepared sheet and broil for 10 minutes. Turn over vegetables and rotate pan. Broil 10 minutes longer or until vegetables are blackened. Cool 10 minutes. Peel tomatoes, onion and garlic; peel and seed jalapeno. Place in blender or food processor with lime juice and salt; process unitl desired consistency. Refrigerate. (can be made up to 1 week in advance).Heat skillet over med-high heat until hot. Add tortillas to skillet 1 at a time until blistered and browned, about 15-20 seconds per side; kep warm.Reduce Heat to medium. Add oil, bell peppers and onion. Season with salt and pepper. Cook, stirring ocassionally. 10 minutes or until onion is cooked through and peppers are tender and crisp.Heat beans in a small saucepan over medium heat or place in a microwave-safe dish. Heat in microwave oven on high (100% power) about 1 minute. Stirring after 30 seconds. Spoon 2 tbsp beans on each tortilla; spread evenly. Top with 1/3 cup vegetables and about 2 tbsp salsa.
