12 low fat corn tortillas (6 inch)
9 tbsp sour cream
6 tbsp Newman's Own medium salsa
1 can of fat-free black beans


How Do I Make Vegetarian Fajitas?

Here is how you make Vegetarian Fajitas:

Slice onion and all peppers into strips. Use 1/2 cup of the broth to saute the vegetables. While that is cooking, combine all the spices and cornstarch with the remaining broth and lime juice. When mixture is well combined, add to pan and continue to cook vegetables until soft. Serve on tortillas, topped with black beans, sour cream, and salsa. Servings are considered 2 corn tortillas. I serve with about 1/6 c black beans, 3/4 tbsp sour cream, and 1/2 tbsp salsa per tortilla. Makes six 2-tortilla servings.
