4 oz. Hormel Turkey Pepperoni Minis
1 can Hunt's Garlic & Herb Pasta Sauce
2 boxes (12 oz each) Ronzoni Garden Delight Fettuccine
1/4 c. Extra Virgin Olive Oil
4 eggs, beaten
1 1/2 c. Fresh Shredded Parmesan cheese (I used Kraft)
2 c. shredded part skim mozzarella cheese
cooking spray

Here is how you make GingerSunshine's Baked Fettuccine:

1. Heat oven to 300. Start a large stock pot to boil on the stove for the pasta. Cook according to package directions. Proceed with step 2 while waiting.2. In a large skillet saute the onion and garlic with some cooking spray or a little bit of olive oil until tender if desired. Add ground beef and brown. Drain and return to pan. Add the pepperoni and sauce and heat to a simmer.3. After draining the pasta return to the pan. Add the 1/4 c of olive oil and stir to coat pasta. Add beaten eggs and stir into pasta. Finally, stir the parmesan into the pasta.4. Spray a large 3 quart casserole dish (about 13x9 and 3 inches deep) with cooking spray. Spread half of the pasta mixture in pan. Top with half the meat and sauce and sprinkle with half the mozzarella cheese. Repeat layers.5. Bake for 30 minutes or until cheese is melted and cooked through.Serving Size:?Makes about 15 3-inch pieces (approx. 1 cup each)
