Here is how you make Black Bean, Corn, and Sweet Potato Flautas:

Preheat oven to 425. Small dice all veggies. Mince garlic. In bowl combine diced sweet potatoes with a good sprinkle of chili powder and garlic powder. Sprinkle with a pinch of sea salt and ground pepper and 1/2 tsp olive oil. Stir to combine. Put sweet potatoes on a cookie sprayed with cooking spray. Bake for 15-20 turning them over halfway until cooked through and slightly browned.Over med heat, saut? onions, red and green pepper, and garlic until onions have softened. Add in frozen corn and saut? for two more minutes. Turn off the heat and add spices and salsa. Put about 2-3 tbsp of filling and top with .50oz of cheese. Roll up and secure with toothpick.
