-3/4 C applesauce (this is the remains of 1 C applesauce drained in a fine strainer for 15 minutes)
-2 T canola oil
-2 t vanilla extract

-2 C all purpose flour (9 oz)
-1 C whole wheat flour (4.5 oz)
-1 C granulated sugar (regular sugar)
-2 t baking powder
-1 1/2 t ground cinnamon
-3/4 t ground nutmeg

-3/4C chopped walnuts like Diamond brand (94g)

Here is how you make Rumbamel's Zuccini Pineapple Bread with Walnuts:

--Crush the pineapple if you don't have crushed canned pineapple. Shred the zuccini and add to a large bowl with all the other wet ingredients. Mix well and set aside.--Mix the dry ingredients, except the walnuts, in a medium bowl. Add the dry to the wet and mix, just until moistened and then fold in the nuts. --Pour evenly into two lightly sprayed regular loaf pans and cook at 350 degrees for 50-60 minutes or until a knife in the middle comes out clean.
