This recipe is just my own version of a basic recipe that I used to use on Allrecipes.com. I've altered flavors and changed some ingredients to try and lower calories - but this is all new to me to don't judge me to harshly pleeze! Also, I didn't add icing to this recipe because I figured you can do that yourself if you wish. You can alter flavors to your own likings as well and I'm sure most of you can probably knock off even more calories than I did already. But this is moist and delish! My picky husband whom will only eat chocolate has eaten several already. Enjoy!

1 (18.25 oz) package Butter Pecan Cake Mix
1 (4 serving size) box of Jell-O Fat Free/Sugar Free Butterscotch flavored Instant Pudding
1 Cup Fat Free Sour Cream
1 Cup Unsweetened Apple Sauce
4 eggs (beaten)
1/2 Cup Warm Water
2 Cups Butterscotch Morsels
1 Cup Chopped Pecans


How Do I Make Butter Pecan Cupcakes?

Here is how you make Butter Pecan Cupcakes:

Preheat oven to 350 degrees F. In a large bowl, mix together the cake and pudding mixes, sour cream, apple sauce, beaten eggs, and water. Stir in the butterscotch morsels and spoon batter into cupcake molds/wrappers that have been sprayed with non-stick cooking spray. I filled mine to about 2/3 full. You can either put the pecans in the batter with the morsels or do like me and sprinkle them on top of the icing - your choice.Bake for 25 - 30 minutes or until top is springy to the touch and a wooden toothpick inserted in the center comes out clean. Cool cupcakes thoroughly (very important). I don't know any good (low calorie) frosting recipes and I'm quite ashamed to say that I used Betty Crocker's Whipped Butter Cream Frosting which really went with the flavor I was looking for - then I sprinkled my pecans on top of them. This recipe makes approximately 3 dozen normal size cupcakes. I like to make this recipe using little mini cupcakes which greatly reduces the calories lol. Also - the original recipe is for a bundt pan so if you decide to go that route - bake for 50 to 55 minutes. Number of Servings: 36Recipe submitted by SparkPeople user LTISONE.
