Coat an 10 x 12 inch oven-safe dish with cooking spray.Add the quinoa and 2 1/2 cups water to a medium saucepan set over high heat. Bring to a boil, cover and reduce heat to low. Simmer for 10-12 minutes, until the quinoa starts to uncurl slightly and the water has evaporated.While the quinoa is cooking, place a very large pot over medium heat. Coat the hot pan with cooking spray, then add the ham. Cook the ham until thoroughly heated, stirring occasionally. Transfer the ham to a bowl, cover to keep warm, and return the pot to the heat.
