Add to large dutch oven with EVOO and garlic. Sweat until onions are getting tender. Add beef, and season with salt and pepper. Brown beef in the onions until about half way cooked. Add beans and tomatos. Turn heat up to around medium high. Stir together and season to taste. I used two large heaps of Tastefully Simple Wahoo Chili Seasoning (maybe 1/4 cup total) and a good sprinkle of Lowery Seasoning Salt with a smaller sprinkle of Red Curry Powder. Smell it as you season - you can always add more. After the pot gets to a good boil reduce heat to medium low so it keeps simmering. Simmer for around 3 hours. (The longer it simmers the deeper the flavor and more carmalization of the tomatos.)
