2/3 cup hazelnuts, coarsely chopped
1/3 cup chopped crystallized ginger

Here is how you make Chocolate Hazelnut Ginger Biscotti:

Preheat oven to 350 degrees. Place 1st 5 ingredients in large bowl. Add 3 eggs and vanilla; beat/mix until blended (note that dough may feel grainy/dry). Use hands to mix in chocolate chips, nuts, and ginger. Turn dough onto floured surface. Divide dough in half. Roll each into approx. 12 inch long log. Place 3 inches apart onto parchment lined baking sheet. Flatten each to 2.5 inches wide. Whisk extra egg in small bowl and brush logs with some of beaten egg.Bake until firm to touch -- about 30 to 35 minutes. Cool on baking sheet for 15 minutes. Lower oven to 325 degrees.Cut logs into about 1/2 inch wide slices. Place slices cut side down onto baking sheets. Bake until firm -- about 15 minutes. Transfer biscotti to racks to cool.Optional:Melt white chocolate and use a fork to drizzle chocolate decoratively over biscotti. Let stand until chocolate is firm.
