Prepared pie crust (I usually use Keebler graham cracker crust)


How Do I Make Vegan Chocolate Pie?

Here is how you make Vegan Chocolate Pie:

Makes 8 substantial slices of decadent pie! Preheat oven to 350 degrees F.1. Blend the tofu and sugar in a food processor fitted with an S-blade for about 2 minutes, using a spatula to push down unblended bits from the side of the food processor.2. While you're blending, place the cup of chocolate chips into a microwavable bowl. Microwave on high for 45 seconds and stir with a spoon to get a nice melted consistency (Caution: You don't want to microwave the chocolate chips for too long as they will scorch, and there's nothing sadder than wasted chocolate!). Alternatively, you can melt the chocolate chips in a double boiler, but that takes a little longer and requires more clean-up.3. Pour the melted chocolate into the food processor (use a spatula to get all the chocolate off the sides of the bowl), and whirl with the blended tofu and sugar. Process for an additional minute; again, use a spatula to push down unblended items from the side of the food processor bowl.4. Once you've achieved a nice silky smooth consistency, pour the chocolate mousse into the graham cracker crust. Place in preheated oven and bake for 30 minutes. 5. Remove pie from oven. Let cool at room temperature for an hour and then place in refrigerator for a minimum of two hours. Serve! (Makes 8 large slices of pie).
